DETOX Immune Boosting Soup

It is flu season and building your immune system can prevent you from getting super sick so why not try this DETOX Immune Boosting Soup?

A word of Caution.  This Detox Immune Boosting Soup takes a while to make because of all the chopping.  However, it does make a lot so you should have some left over for lunches.
I was apprehensive about making this soup because outside of chicken there was not much that I liked. Chick peas are not on my  favorites list.
Turmeric has got a lot of attention lately as a super food but I wasn’t sure about it as an ingredient in a soup.  Surprise!!!  It is the secret ingredient that makes this soup really tasty.


I also believe that that most of the ingredients are on Weight Watchers 200 free list. So that means you can eat this with out feeling any quilt.
We also found that the soup is not heavy so it digests very easily.  If you are looking for something to eat before working out this Detox Immune Building Soup might be a good choice.

Detox Immune Boosting Soup Instructions

To start cut  onions, celery and carrots as they go in the pot first with olive oil.  Once in the pot stir every once in a while for 5 minutes.
During that time cut up mushrooms and garlic as they are added next to cook for 3 minutes.

( I would suggest to use Shiitake mushrooms as they are high in B Vitamins and D.)

Then add the chicken stock, bay leaves and turmeric, crushed red peppers, salt and chickpeas, bringing to a boil.  Add chicken, cover and simmer for 20 minutes.
After simmering, add kale , cover and simmer for 5 more minutes.

***Remember to discard the bay leaves before serving.

Even after two of us ate the Detox Immune Boosting soup for dinner there was plenty left.

  • • 2 Tbsp olive oil
  • • 1 onion, chopped
  • • 3 large celery stalks, chopped
  • • 2 large carrots, peeled and chopped
  • • 1 cup mushrooms, sliced
  • • 10 cloves garlic, minced
  • • 8 cups chicken stock
  • • 2 bay leaves
  • • ½ tsp. turmeric
  • • ½ tsp. crushed red pepper
  • • 1½ tsp. sea salt
  • • 1 (15 oz) can chickpeas, drained and rinsed
  • • 3 cups shredded rotisserie chicken
  • • 2 cups baby kale leaves


  • 1. In a large pot or dutch oven, heat oil over medium-high heat and sauté onion, celery and carrots, stirring occasionally, about 5 minutes. Add mushrooms and garlic, cooking another 3 minutes.
  • 2. Stir in the chicken stock, bay leaves, turmeric, crushed red pepper, salt and chickpeas; bringing to a boil. Mix in shredded chicken, cover and turn down heat to a simmer for 15 to 20 minutes.
  • 3. Add kale, cover and simmer an additional 5 minutes. Discard bay leaves, serve and enjoy!
