Since I can remember I have created a weekly dinner menu on Saturday morning for the following week. Sometimes it has been with great thought and sometimes roughly written down. Then, there are times I go out shopping at the market and determine the weeks menu when there. But, as soon as I get home I write everything down so I won’t have to worry about forgetting anything.
I LOVE Pinterest!!! But who doesn’t. I like searching and generally seeing what is new and what other people like.
So, this week I am going to experiment. For this weekly dinner menu I am going to use posts from my ” Food for Foodies” board. Now when I shop on Saturday I will have all the ingredients I need to buy. This should be interesting.

This recipe was chosen for Sunday because I have flank steak in the freezer. I will serve Basmati Rice with the stir fry. This will also be a great dinner for left overs for lunch. I like having dessert for Sunday dinners so I will make Lemon Mousse.
Detox Immune -Boosting Soup
It is pretty obvious why I would pick this recipe for Monday. After eating too much on the weekend it is better to eat something a little lighter and super healthy. It is flu season and I am keeping my fingers crossed no one gets it!! I will buy a cooked rotisserie chicken at Costco on Monday so I won’t have to cook one. This recipe serves 8 so it will be great for lunches as well.
Mushroom Hazelnut Pappardelle
During the week it is great to add in a vegetarian meal and I find that it is easy to do so with a pasta. Two of my favorite things, mushrooms and hazelnuts. If you leave the cheese out then it would definitely be lactose free too. I will serve a mixed green salad with balsamic vinaigrette on the side so the pasta potions will be smaller.
Chicken Fajita Quesadillas
I am little concerned our weekly dinner menu has too much chicken in the recipes but I LOVE chicken!!! Wednesday is a our work out night so it is great to have something that can be pulled together quickly and can be served with a green salad. Plus, you don’t want something too heavy. I will use some of the rotisserie chicken I purchased on Monday for this recipe so I won’t waste any.
I have used this same recipe many times and it always turns out. It only takes 5 minutes for prep. A fast prep time is important because at the end of the week I don’t like cooking as much. We generally go out for dinner on Thursday nights but I have a master mind class at 6:00 pm on Fridays so we go out on Friday night instead. Plus,we are going out on Saturday night with friends for Winterlicious.
Our friends are going to meet up at our home before going to the restaurant so I will make some canapes.
I will save some salmon that I cooked on Thursday night for this recipe.
I made the Spinach and Artichoke Puff Pastry pinwheels already and froze them so all I have to do is cut them and bake. Yum Yum!!
