I was trying to figure out how long I have used this Apricot Dijon Glazed Chicken Recipe and I thought it was over 15 years. It is from a Martha Stewart’s magazine when they had recipe cards you could pull out. Luckily on the card is says the year, 2004. So, there you have it! If I kept this card since 2004, it must be worth it!!
I have made this recipe for our family for a regular weekly dinner and also used it when we have entertained. I serve it with rice and a green vegetable so it is balanced meal. It is super fast and easy to make.
Start off by cleaning 8 chicken thighs. The original recipe does not define if the chicken thighs are boneless or bone in. I have made them both ways. I like the bone in more but it really doesn’t matter.
There are only three ingredients besides the chicken. Dijon mustard, honey and a jar of apricot jam. That’s it! How easy it that?
Clean and dry the chicken thighs and place in a casserole dish. ( This recipe can easily be doubled if you want to feed a hungry group. I allow for two pieces per person.)
Add jam, mustard and honey together in a sauce pan. Bring to a boil on medium heat and then reduce to low medium so it can cook down to half. Now I must confess that sometimes the cooking down process goes as planned but sometimes it doesn’t always want to cook down. It may depend on the jam but don’t get concerned. If it doesn’t get thick and cook down to half it will not make a big difference.
I actually like not cooking it down to half because then there is more sauce. So don’t worry as it doesn’t have to be perfect.
Pour the sauce over the chicken and insert in a 425 degree oven for approximately 30 minutes.
I like serving the Apricot Dijon Glazed Chicken Thighs with rice and a green vegetable. I normally use either broccoli, asparagus, or snow peas.
The cooked chicken looks pretty in a white casserole dish and is pretty enough to serve when entertaining.
