Butter Muffin Recipe – Morsels of Goodness!
Only three ingredients and 25 minutes and you have perfect Butter Muffins

This is one of my Go To recipes. I know you probably think…ya ya she has so many Go To recipes and this is just another one she says is. But this Butter Muffin Recipe has been made 100’s of times. Not to mention that I have eaten probably more than 100. That is just plain scary when you see the ingredients.
There are only three ingredients in the Butter Muffin Recipe. For those that don’t like a little bit of fat in their diet then these little morsels of goodness might not be for you.
However, for those that like something delicious and fast then this is the recipe for you.
I think I started using this recipe when I could not find decent dinner rolls. Butter Muffins are really a good substitute for rolls and goes nicely with most dinners. This week I made them to go with my daughters Beef Bourguigon. They are terrific with stews and roast beef dinners.
I like having these three ingredients in the house so I can whip these up pretty quickly.
All it take is one cup of melted butter, two cups self rising flour and 8 ounces of sour cream.
Since I was making the butter muffins for my daughter I had to remove lactose. So, I substituted real butter for a butter like spread. The sour cream was also Lactose Free.
All three ingredients are added together and stirred.
Take a table spoon and scoop out enough to fill the cavity of a miniature muffin tin. Since it is sticky I use another tablespoon to push it off the spoon into the tin.
Place two muffin pans in oven to save time. Only need approximately 25 minutes to brown nicely.
Since I used a butter substitute the muffins did brown more than usual. I felt they also tasted salty but others did not agree with me. However, they were still really good !! Just morsels of Goodness!!!
The butter muffins would work great being served with the Slow Cooker Pot Roast.
Yields 2 dozen small muffins
I have no idea where I got this recipe from and I have had to for many years. It is scary to think how many times I have made this recipe. It has always turned out!!
