Great for Entertaining and Heating up for Breakfast

As you know I try to stick to healthier food choices but this recipe is far from it. You will have to forgive me because this recipe has been used 100’s of times, way before I decided to eat healthier. However, I am sharing it because Schwarties Hash Browns is super to have when you are entertaining. It is a great casserole that can feed a lot of people and is super delicious as left overs. Plus, it is super fast to make.
This is the original recipe but you can lighten it up more and use dairy free butter, lactose free/ dairy free sour cream and super old cheese so there is less lactose. Plus, you could use low fat sour cream. As you know I love Earth Balance spread instead of using butter. I have not found a recipe that Earth Balance spread is not a good substitute.
You can make this way ahead and freeze it. I love any recipe that can be made well a head. We use this recipe often for Christmas Eve and then we heat the leftovers ( that is if there is any left) for breakfast to go with our eggs.
This recipe has been adapted many times over. As far as I can tell it was the The Best of Bridge Recipe Book – Enjoy- More Recipes From the Best of Bridge that made it so popular. The recipe is the original so the you can start playing around with the ingredients.
Preheat oven 350 degrees F
Get a super big bowl.
Add 2 pounds of Hash Browns in a bowl. They can sit there and thaw for a while to defrost a bit. It is easier to mix if they are defrosted but not entirely necessary.
1 x 500 ml carton sour cream
2 x tins cream of mushroom soup
1/2 cup melted butter ( put it in a measuring cup and melt in micro)
Grated onion and salt to taste ( this is where I stray from the recipe a bit. I like a ton of onions. Use yellow onions and chip relatively finely.)
Add 2 x cups of shredded Cheddar cheese ( I buy the shredded so I can make this super fast)
MIX WELL. Not easy to do but a wooden spoon works well.
Place all mixed ingredients into a 9 x 13″ baking dish. Remember you can freeze this so sometimes I use 2 small pans. One for heating and one to freeze for later.
Sprinkle Parmesan Cheese on top
Yields 8 to 10
This recipes makes a decent amount so it is great when you are having a crowd. But remember it freezes well.

When ever I find a great recipe for a big crowd I get excited. Generally if it is well liked it becomes a staple. Our Mocha Torte recipe is just that. This recipe is easy to double and will feed a ton of people. Not only is it a staple at our home but it is also for many friends. It is a keeper.
