EASY QUICK MOCHA TORTE RECIPE
This EASY QUICK MOCHA TORTE recipe is from my mother-in-law’s collection. I believe the recipe originated from a church bazaar recipe book. It was when it wasn’t as easy as putting a recipe on word and sharing it. Instead it required someone to use a typewriter and spell check themselves and then hand staple the pages. Rather primitive to our capabilities we have now. But you have to appreciate the diligence it took to make these little recipe books.
This recipe is super easy and only needs basically 6 ingredients. My mother-in-law made this recipe countless times and so have I and so has many friends and friends of friends. It is a great recipe to double if you are going to have a big group. Traditionally it is made in a 8 x 8 GLASS pan which makes it easy to transport. This recipe should be made the night before. You can make it really in the morning to serve that night but it is not quite as good.I have got too tired at night to make it so I made it early in the morning. The more it sits in the fridge the better as the crackers get softer and melt in your mouth. ( for this post I made it at 9 am and we ate it at 8 pm and the crackers were soft)
Below is a shot of the ingredients . The chocolate sauce could be any brand as most have the same consistency. I have used all kinds of coffee crystals and mocha powder. The mocha powder was not a success but all kinds of coffee crystals have worked.
Below is a shot of how thick the whipping cream needs to be. It should have quite stiff peaks. When I first started making this so Quick Easy Mocha Torte Recipe I was always worried about not whipping the cream enough or too much. Below is a image to give you an idea how thick the cream should be.
You can see below that once you add the powdered sugar, chocolate syrup and coffee it stays pretty firm. This is when you need to get a spoon and have a taste. Limit yourself to one spoon because you will need all the creamed mixture for the three layers. While making the Mocha Torte Easy Quick I do find I like licking the whisk from the mixer. However, it is like playing solitaire and there is someone right behind you wanted to help out with the whisk.
If there is a tricky part about making the mocha torte it is at this stage where you have to lay the first layer of graham crackers. You may have to cut pieces of crackers so it covers the whole bottom of the glass pan. Please NOTE you have to use a glass pan and not metal.
Do around 4 blobs of the mocha mixture on top of the graham crackers. The crackers will start moving around initially when you are spreading the creamed mixture around. Fortunately doing the other layers they don’t move around.
The rest is super easy. Add one more layer of crackers and more creamed mixture on top. Just be careful to leave enough creamed mixture that there is enough for the next layer.
Then add another row of crackers and creamed mixture on top and then shaved chocolate. Place in the fridge until ready to serve.This recipe is easy like the Lemon Mousse Dessert.
